小米淘米水抗氧化活性及对酪氨酸酶的抑制作用研究 被引量:3

摘要 以小米淘米水为研究对象,并以抗坏血酸为对照,测定小米淘米水的抗氧化活性及对酪氨酸酶的抑制作用。结果表明:小米淘米水对DPPH、羟自由基和超氧阴离子均具有清除作用,对酪氨酸酶活性也具有抑制作用,且随着浓度增加而增强。当水米比例为2:1时,其还原力与浓度为0.5mg/mL的Vc接近;水米比例为4:1时,对DPPH清除率达到90%;水米比例为2:1时,对羟自由基清除率为50%;水米比例为2:1时,其对超氧阴离子清除率为40%;当水米比例为2:1时,酪氨酸酶活性抑制率达到20%以上。这说明小米淘米水具有很好的抗氧化性及对酪氨酸酶活性的抑制作用。 This paper took washing water of millet as research object and ascorbic acid as a control, measured its antioxidation activities and inhibition of tyrosinase. The results indicated that washing water of millet has abilities to scavenge -DPPH., -OH. and 02', as well as the abilities to inhibition of tyrosinase, and it enhanced with increasing concentration. When water-millet ratio was 2:1, the reducing power was similar to Vc with concentration of 0.5 mg/mL. When water-millet ratio was 4:1, the scavenging rate of -DPPH. achieved 90%, and when water-millet ratio was 2:1, the clearance rate of -OH. achieved near to 50%, the clearance rate of O2 achieved 40% and the inhibition rate of tyrosonase achieved above 20%. These results show that washing water of millet has great antioxidation activities and the ability to inhibition of tyrosinase.
