摘要 这是一项用山楂、蜂蜜和红枣制造山楂蜜枣饮的研究。山楂、蜂蜜和红枣都是我国传统的食药两用资源 ,在中医药和保健食品中经常使用。山楂还是我国特有的果树。本研究与类似饮料及其研究相比有以下优点 :( 1)山楂的红枣的浸提均采用果胶酶以缩短浸提时间 ,提高浸出率 ;( 2 )产品的澄清采用了果胶酶—蜂蜜复合澄清剂以降低澄清温度 ,缩短澄清时间 ,减少果胶用量 ;( 3)红枣烘焙产生蜜香 ,配以优良蜂蜜 ,使产品具极其浓郁的蜜枣香风味。研究过程采用正交试验法得出最佳生产工艺条件 :( 1)山楂浸提 :细度过 4 0目、果胶酶 0 1%、浸提温度 50℃、浸提时间 6 0min ;( 2 )红枣烘焙和浸提 :烘焙温度6 0℃、烘焙时间 6 0min、浸提温度 50℃、浸提时间 30min ;( 3)产品澄清 :果胶酶 0 0 5%、蜂蜜 3%、温度2 5℃、时间 80min ;( 4)产品的最佳配方 :山楂汁 4 5%、红枣汁 52 %、蜂蜜 3%、蛋白糖 0 1%。山楂密枣饮色泽红亮、透明 ;枣香和蜜香融为一体、酸甜适口 ;且山楂、蜂蜜和红枣的营养保健作用互补、相得益彰 ,具有较好的开胃、健脾、提高免疫力、延缓衰老、降血脂和降血压的保健功能 。 KH2D] This is a study that Hawthorn Honey Jujube Drink has been made by hawthorm honey jujube. Hawthorn, honey and jujube are all traditional recoures of food and medicine in China(hawthorn also is a special poroduct in this country). They are freguently used in acient Chinese medicine and health food. As compared with similar drink, the study has many advantages as follwos:(1)Hawthorn and jujube are soaked by pectic enzyme so that the soaked time is shortened and the soaked efficiency is increased. (2)The product is cleared by pectinase-honey clearer so that the temperature of clearing can be lowered and the time of clearing can be shortened. (3)Jujube can be cured to produce sweet smell of honey and by mixing the excellent honey cause the products and be sweet smell of honey and Jujube to drink. In the study means of orthogonal has been used so that the optimal technologic conditions can be gotten and prescription have been so choosen by orthogoral test:(1)The soak of hawthorn:Size of hawthorn is less than 40 item. Pectinase is 0.1%. Temperatare is 50℃. Time is 60min. (2)Cured and soak of Jujube:Temperature of curing is 60℃. Time of curing is 60min. Temperature of soak is 50℃. Time of soak is 30min. (3)Dearing of drink:Pectinase is 0.05%. Honey take up3%. Temperature is 25℃. Time is 80min (4)Optimal take up dispensation:Hawthorn Juice take up 45%. Jujube Juice take up 52%. Honey take up3%. Protein sugar take up 0.1%. The drink is red light and transparent with the sweet smell of honey and Jujube. Cour and sweet tast is to one's taste and their health action help one another and there are the better whet the actions, healthy taste strengthen immunity, put off old and feeble, cut down blood-fat and pressure ele. It is a tipical eastern health drink.
