海藻糖是一种非还原性二糖,文章介绍了海藻糖的特殊的结构,生产工艺,及其特殊功能,并对生产工艺进行深入研究,优化选择。文章还展望了海藻糖作为一种新型食品添加剂在食品等许多领域良好的应用前景。
Trehalose is a non-reducing disaccharide, its special structure, function and production process were introduced in the paper, and optimal technology was obtained by deeply studying the production process. The trehalose＇s application in food industry as a kind of new food additive was also prospected.
