摘要
岐山面是以地名命名的地方特色美食,至今已经流传3000多年。岐山面从其名称来历、原料配伍、制作过程、食用过程都包含着强烈的文化意象,这种文化恰恰又是岐山周文化的重要组成部分,而周文化的核心是其倡导的周礼,周礼最显著的特点就是"和"元素,即和谐性意蕴。
Qishan Noodle, a local distinctive delicacy named by means of the local name, has a his- tory of more than three thousand years up to now. The origin of the name of Qishan Noodle, ingredient concoction, making process, and eating procedure connote intense cultural imagery. This culture hap- pens to be an important component of Zhou culture in Qishan. The core of Zhou culture is its advocacy of Zhou rituals. The most noticeable characteristic of Zhou rituals is its element of "harmony", namely harmonious connotations.
