摘要
为降低啤酒生产中双乙酰的含量 ,从不同土壤中分离出 1 2 4株芽孢杆菌 ,经过用不同发酵培养基和啤酒中双乙酰降低试验 ,反复筛选 ,得到一株初产α-乙酰乳酸脱羧酶活性较高的地衣芽孢杆菌 H6(Bacillus licheniformis H6)。
strains of Bacillus were isotated from the soil.Through many times screening with diffetrent fermentation media and experiments on the decreasing of diacetyl in beer.One Bacillus licheniformis strain H 6 was obtained,which had higher activity of α acetolactate decarboxylase.
