摘要 根据奶茶类饮料的组成特点,采用无水乙醇加氯化钾固体增强盐析效果,破坏饮料中的乳化体系,沉淀蛋白质等物质,得到澄清溶液,在pH=8.0的三羟甲基氨基甲烷缓冲体系中,以酒石酸亚铁为显色剂,测定奶茶中茶多酚的含量。茶多酚浓度在0.003~0.35mmol/L范围内符合比尔定律,方法的相对标准偏差为1.1%~3.5%,回收率为85%~113%,可广泛应用于奶茶类饮料中茶多酚含量的测定。 Compound of absolute alcohol and KC1 were used to enhance the effect of salt out. The emulsification system has been broken and proteins had been precipitated in milk tea. In tris buffer at pH= 8.0, using the ferrous tartrate as reagent, the content of tea polyphenols in milk tea was determined. Beer's law is obeyed in the range of 0. 003~0.35 retool/L, and The result showed that RSD kept as low as 1. 1%~3.5% and the recovery ratio reached 85% ~113%. indicating its perspective application in measurement of tea polyphenols in milk tea,
