南充食物链硒的传递和人群硒营养水平

摘要 取样测定了南充地区土壤硒形态以及油菜、各种粮食、蔬菜和人发硒含量.南充土壤总硒(105±38.1μg/kg,n=31)和土壤水溶态硒含量(3.88±1.97μg/kg)按照文献分类分别在硒缺乏和缺乏边缘范围,但和土壤配套采取的油菜植株硒含量属于高硒范围(88.5±36.1μg/kg).土壤亚硒酸态硒含量(0.299±0.183μg/kg)和油菜硒含量显著相关(r=0.529,P<0.01,n=27),是比土壤总硒(r=0.0273)和水溶态硒(r=0.361,P<0.05)更好的土壤硒营养状况指标.南充市售主粮和杂粮硒含量都在中等和高硒含量范围(41.0-98.0μg/kg).南充人群发硒含量(425±88.6μg/kg,n=29)显示南充地区人群属于中等和高硒营养水平.南充土壤有足够植物有效态硒,食物链能够满足人群硒营养需求. Soil, rapeseed plant from the soil, cereals and vegetabs from market, as well as human hair were collected in Nanchong for total selenium(Se) and Se species in soil were measured by fluorimetric method. The total Se ( 105 ± 38.1 μg/kg, n = 31 ) and the water soluble Se (3.88 ± 1.97μg/kg) in soil were in the range of deficiency and sub - deficiency respectively, according to the Threshold of Se in Environment and Human Health by Jian - an Tan. But the Se in rapeseed plant (88.5 ±36.1 μg/kg,n =27) grown on the soil was in the high Se category-by the same classification, indicating that both total Se and water soluble Se in soil were not good measures as plant available Se in soil. The selenite in soil (0. 299 ±0. 183 μg/kg) with better correlation coefficient with rapeseed plant ( r = 0.529, P 〈 0.01, n = 27 ) could be used as nutritious index of Se in soil. All the cereals on the market in Nanchong were medium and high in Se. The Se in human hair (425±88.6 μg/kg,n =29) proved that the Se intake in local population was sufficient.
