摘要
在20℃条件下,使用三种不同的保鲜剂对去皮新鲜莲子进行保鲜包装对比试验;与此同时,测试了各包装袋内氧气和二氧化碳在不同时间内体积分数的变化值,建立去皮新鲜莲子呼吸速率模型,利用最小二乘法对使用不同保鲜剂包装袋内呼吸速率模型中的参数进行识别。结果表明:在16 h内,20℃条件下,壳聚糖溶液对去皮新鲜莲子保鲜效果最好,苯甲酸钠溶液有一定保鲜效果,柠檬酸钠溶液无保鲜效果。氧气和二氧化碳速率以及体积分数的实测值和预测值基本吻合。
Abstract: At the temperature of 20℃, three antistaling agents used in the peeled fresh lotus seed was compared and experimented for fresh - keeping packaging. At the same time, the variation values of the volume fraction of oxygen and carbon dioxide in each package at different time is tested, and the respiration model of the peeled fresh lotus seed is set. The respiration model parameters in each group used in three groups of antistaling agents were respectively identified by least- square method. The results show that, at the temperature of 20℃ the fresh - keeping effect in package bag of the Chitosan solution is significantly better than the others, the Sodium solution has a litter effect and the Sodium Citrate solution has no effect. The measured and computed values of rate and volume fraction of oxygen and carbon dioxide are consistent.
