摘要
采用热水自溶法从草鱼内脏中获取鱼油和具有抗氧化性活性的水解物。在单因素的基础上,进一步运用响应面法优化最优水解条件,并测定最优条件下所得的水解产物的抗氧化活性。结果表明,最优提油工艺条件为水解温度59℃,水解时间74min,加水量56mL/100g样品。响应面回归模型预测该条件下的提油率为71.60%,而试验测定值为(68.34±0.89)%,与预测值基本吻合。以未进行热水自溶水解的匀浆液作为比较,每10mg干物质的水解液羟自由基清除能力更强,达到(18.68±1.80)%。
Fish oil and the antioxidant activity hydrolysate were re- spectively extracted from grass carp viscera by hot water autolytic hydrolysis. On the basis of the single factor, the hydrolysis condi- tions were optimized by response surface methodology (RSM), and the antioxidant activity of hydrolyaate were investigated. The opti- mised hydrolysis conditions were temperature 59 ℃, time 74 rain, water addition 56 mL/100 g sample. Under above conditions, the oil extraction rate was (68. 34± 0. 89)%, which Was in accordance with the predicted value of 71.60%. Compared with antioxidant ac tivity of homogenate that was not hydrolyzed by hot water autolytic method, the hydrolysate of each 10 miligram dry material exhibited a stronger scavenging activities up to (18.68±1.80)% for hydroxyl radical.
