摘要 射频技术的研究和开发利用已经成为低水分活度食品或农产品加工领域的一个热点。文章介绍射频加热技术的基本原理,重点阐述介电特性的测定方法、低水分活度食品的介电特性研究现状以及射频技术在低水分活度食品中的应用概况,展望未来该领域的研究方向。 The explorations and application of radio frequency heating technology are one of the hottest topics in the processing fields of food with low water activity. The principles of radio frequency heat- ing of materials were introduced. The dielectric property measure- ment techniques and applications in the fields food processing were focused. A t last, suggestions and directions of research in the future were put forward in this paper.
