摘要
水果在0℃以上的低温中表现出生理代谢不适应的现象,称为冷害。热带水果的生长发育是在高温、高湿的气候环境中进行的,故对低温很敏感。在储藏保鲜过程中由于储存温度过低而发生冷害,严重影响其品质和商品价值,因此对热带水果贮藏中的冷害控制极其重要。
Fruit at low temperature above 0 ℃ shows physiological metabolism can not adapt the low temperatu, called chilling injury. Tropical fruit grown in high temperature and humidity is very sensitive to low temperature. In the process of the tropic fruit preservation and fresh-keeping, due to the storage temperature is too low and produce chilling injury, serious influence the quality and the value of commodities. Therefore, the chilling injury control is very important in the tropic fruit preservation and fresh-keeping.
