摘要
采用正交设计法 ,研究了麒麟菜高活性膳食纤维的提取工艺条件 ,筛选出麒麟菜碱处理和漂白的最佳工艺条件 ,提取出麒麟菜高活性膳食纤维 ,并进行人体的功能性试验。结果表明 ,麒麟菜高活性膳食纤维的产率达 32 .4 1% ,颜色较白 ,膳食纤维干基含量 w达 82 .57% ,钙含量 w2 .13% ,磷含量w0 .0 13% ,膨胀力为 2 4 .5m L / g,持水力为 14 50 % ;麒麟菜膳食纤维的功能性优于小麦麸皮膳食纤维 。
This article is about research on technological conditions for extraction of high active dietary fiber from Eucheuma. The optimum technological conditions for alkali treatment and bleaching of Eucheuma have been chosen by orthogonal design method.The high active dietary fiber have been produced from Eucheuma by the optimum conditions.The functional property of Eucheuma dietary fibers was tested by human body taking orally.The results showed that the yield of high active dietary fiber of Eucheuma was 32.41%,and the color was nearly white.The contents of dietary fiber,calcium and phosphorus were 82.57%,2.13% and 0.013% respectively.The expansive capacity and water holding capacity were 24.5 mL/g and 1450% respectively.The functional property of Eucheuma dietary fiber was better than wheat bran fiber,and Eucheuma dietary fibers had a good curative effect for constopation patient.
