摘要
胡麻胶是天然植物胶 ,其主要成分为半乳糖、木糖等多糖。理化性能研究表明 ,胡麻胶易溶于水 ,其胶液具有非牛顿流体的流变性 ,在 pH6～ 12时粘度基本稳定 ,具有良好的起泡性、稳定性。
Flaxseed gum, a kind of natural plant gum, consists mainly of polyoses such as galactose and xylose. The studies on the physical and chemical properties of flaxseed gum indicate that it is very soluble in water. The flaxseed mucilage has the same rheology as non Newtonian flow. Its viscosity was stable at pH 6～12. The gum has good foamability, stability, emulsibility and salt resistance.
