兰州市叶菜类蔬菜中重金属含量及健康风险分析 被引量:5

A Survey of Heavy Metal Concentrations in Leaf Vegetables in Lanzhou and Their Potential Risks to Human Health

摘要 通过对兰州市叶菜类蔬菜中Cd、Hg、Pb、As和Cr 5种重金属含量状况调查,研究了蔬菜中5种重金属的含量及健康风险.在兰州市3个大型蔬菜批发市场采集8种蔬菜61个样品进行测定,结果表明:叶菜类蔬菜中Cd、Hg、Pb、As和Cr 5种重金属的含量范围分别为0.002~0.083mg/kg、0.000 2~0.008 2mg/kg、0.003~1.103mg/kg、0.002~0.133mg/kg、0.001~0.138mg/kg,其中Pb的超标率比较高,在油麦菜中超标率最高达62.5%.兰州市叶菜类蔬菜中5种重金属的人均日暴露量都低于ADI值,最大为Pb,达0.063mg/(d.人),食用本研究中污染最严重的蔬菜会对人体产生危害. In order to assess the risks to human health posed by elevated concentrations of heavy metals of Cd, Hg,Pb,As and Cr in leaf vegetables,and to identify pollution-tolerant vegetable varieties,a large scale survey of heavy metal levels in leaf vegetables in Lanzhou was conducted. Eight varieties of 61 fresh vegetable samples were obtained from three vegetable wholesale outlets. The results showed that the leaf vegetables contents of Cd, Hg, Pb,As and Cr varied in the range of 0. 002~0. 083 mg/kg,0. 000 2~0. 008 2 mg/kg,0. 003~1. 103 mg/kg, 0. 002~0. 133 mg/kg,0. 001~0. 138 mg/kg respectively. And the pollution of Pb is the most serious,its exceeding standard rate is 62. 5 % in the lettuces. The daily intakes of heavy metals in vegetables per capita in Lanzhou were less than ADI (Allowed Daily Intake). The highest daily intake of Pb was 0. 063 mg/day for one person. Some edible vegetables having serious pollution will turn into a health risk to local residents.
