黑乌龙茶和乌龙茶的茶叶成分比较分析 被引量:3

摘要 为探究黑乌龙茶的品质特点,以福建安溪县2012年春季产黑乌龙茶和乌龙茶茶样为研究对象,对其进行感官审评,并对水浸出物、茶多酚、游离氨基酸总量及生物碱、没食子酸、儿茶素、氨基酸组分等物质进行检测。试验得出,黑乌龙茶中茶多酚、氨基酸组成、儿茶素等较乌龙茶偏低,可可碱和没食子酸的含量较乌龙茶略高。
