不同温度条件下氮气气调储粮对稻谷脂肪酸值的影响 被引量:14

THE EFFECT OF CONTROLLED ATMOSPHERE BY NITROGEN ON FATTY ACID VALUE OF PADDY STORED UNDER DIFFERENT TEMPERATURE

摘要 通过对不同水分的稻谷(13.6%、15.1%)在3种不同温度(20℃、25℃和30℃)条件下,进行持续充氮气调储藏、交替充氮气调储藏和常规储藏18个月,研究不同氮气气调浓度(90%、95%和98%)对稻谷脂肪酸值的影响。结果表明:持续充氮气调储藏、交替充氮气调储藏都可以延缓稻谷脂肪酸的增加;持续充氮气调储藏延缓稻谷脂肪酸增加的效果明显高于交替充氮气调储藏;在20℃条件下90%氮气浓度的交替充氮几乎没有延缓效果;氮气气调储藏对启封后稻谷的脂肪酸值不会产生影响。可为粮库根据不同水分的稻谷需要控制的脂肪酸值增加值来选择合适的储藏方式(控温、充氮方式等)提供基础数据。 The study has focused on the effect of controlled atmosphere by nitrogen at the concentration of 90%, 95% and 98% respectively on fatty acid value of paddy, which has been carried out by storing different moisture content paddies (13.6%, 15.1%) at three different temperatures (20℃,25℃ and 30℃ ) witla continuous charging nitrogen controlled atmosphere, alternating charging nitrogen and conventional mothed for 18 months. The results had demonstrated that both continuous charging nitrogen and alterna- ting charging nitrogen storage can delay the increase of fatty acid value of paddy, furthermord, the foromer had better effect on dilaying the inttyocin value of paddy. Under the condition of 20"C, alternating char- ging 90 % nitrogen had no delay effect, the fatty acid value of paddies hadn't changed after the application of controlled atmosphere by nitrogen had been removed. The results obtained have provided granaries with the basic data to select the appropriate methods (temperature control, charging nitrogen and so on) for re- quired addition of fatty acid value, according to different moisture content paddies.
