摘要
中国烹饪协会发布的最新餐饮行业数据表明,高端正餐下滑明显,经营状况恶化,餐饮行业一时转型之风盛行。高端餐饮转型虽然困扰较多,但市场洗牌将不可避免,高端餐饮回归基本面的转型升级成为必须。同时大众化市场并非蓝海,转型升级应以升级为基本点,高端餐饮做为一种市场形态不可能消失,但需要回归理性。
Statistics recently released by China Cuisine Association showed that high end food consumption was declining. Thus many exclusive restaurants attempted to transform their image from high-end to family friendly. This paper analyzed the problems and necessities for the transformation, and proposed three modes of decision-making and five levels of how to return back to normal. The conclusion drawn was that it was inevita- ble to reshuffle the high-end restaurant business. It is a must for them to transform and upgrade because retur-ning to family friendly is not a panacea for the whole business. Nevertheless, high-end restaurant will not dis-appear as a market form, but call for rational thinking.
