摘要 蛋白酶K是一种在生物科学研究和生物加工过程中具有多种应用的重要丝氨酸蛋白酶,并且在食品和饲料工业中有潜在的重要应用。本文对蛋白酶K的分子结构、催化特性、定向进化、重组表达和应用研究的最新进展进行了研究总结,并对蛋白酶K在未来的研究方向进行了展望。 Proteinase K is a kind of important serine protease which has a variety of application in biological science research and biological processing process and has an important potential application in the food and feed industry. In this paper,the molecular structure,catalytic properties of proteinase K,directed evolution,and the latest progress in the study of recombinant expression and application were summarized and the research direction of proteinase K in the future was prospected.
