摘要
中国近海有丰富的贝类资源,贝肉以及其副产物主要用于冷鲜、干制品以及风味酱料加工,大部分下脚料加工利用率低,被丢掉后在一定程度上也造成了环境污染。酶法制备活性肽,研究其结构与功能活性的关系和活性肽的应用是当前国内外研究的热点。综述国内外相关的制备纯化和构效研究的进展,分析和探讨贝类活性肽在生产中存在的一些问题,并阐明海洋贝类活性肽在食品工业、医药、化妆品和饲料等领域中的潜在应用价值及前景,为进一步高值化开发利用海洋贝类提供参考。
There is a rich resource of shellfishes in coastal waters in China.The shellfish meat and its by-products are mainly used to chilled processing, dried and some flavor sauce products.However, a mass of waste by- products are neither beneficial to the environment nor in high value processing,in a certain extent.In view of this, more and more domestic and foreign researches come to pay attention to the enzymatic preparation and purification of bioactive peptide from shellfish,the exploration of its structure-activity relationship and its application of active peptide.The status quo and the problems exist in the present were reviewed and summarized in this paper.Given that,shellfish active peptides had potential applications in medicine,cosmetics and food industry , etc.
