摘要
菊粉是一类天然果聚糖的混合物,是十分理想的功能性食品配料,它具有膳食纤维和益生元的双重功效,已被广泛应用于医药保健业、食品工业等领域,具有广阔的开发前景。本文对菊粉的来源、特性及在食品中的应用现状进行了综述,为菊粉的进一步开发应用提供参考。
Inulin is one type of natural fructan mixture and ideal functional food ingredients,with double functions of dietary fiber and prebiotics,which has been used in the health care and food industry widely.The development prospect of inulin is broad. In this paper, source and characteristics and application status in food of inulin were reviewed ,this might give the further development of inulin for reference.
