摘要
亚硫酸盐是食品行业广泛使用的添加剂,但亚硫酸盐对人体有一定的危害,过量摄入会导致一些临床反应。综述了国外不同食品中亚硫酸盐含量以及近些年一些国家对不同人群亚硫酸盐摄入量的调查结果,并用摄入量评估的方法评估可能对人群健康产生不良作用的亚硫酸盐摄入的量,旨在引导消费者了解更多亚硫酸盐的特性,提高食品添加剂安全意识,改善饮食习惯。
Sulfites,as food additive,are widely used in food industry.Excessive intake will lead to some clinical responses since sulfite has certain hazards on the human body.A survey was made on the concentrations of sulfite in different kinds of foreign food and intake assessment of sulfite in some countries of different populations.The method of intake assessment was taken and applied for the adverse effect on the health of consumers aiming at guiding the public learn more about the properties of sulfite and enhancing their awareness of food safety of additives and improving eating habits.
