摘要
高校学生正值青春发育期,处于人体生长发育的第二次突增阶段,面临学业与就业的双重压力,因此对营养素数量和质量的要求也更高,而高校食堂的午餐仍以过去大锅饭式经营为主,菜肴不仅口感较差,而且营养价值较低。调查组对高校学生进行了膳食调查,提出了午餐的合理膳食设计,分析了如何进行营养配餐来满足大学生午餐的营养需求。
College students have a higher demand for dietary nutrition because they are in the second most rapid phase of physical growth and are under the double pressure of both academics and employment. However, lunches in colleges still feature unsatisfactory taste and poor nutrition. This paper conducts a dietary survey of college students and suggests a balanced lunch design including an analysis of how to combine different dishes to meet the students' demand for nutrition.
