摘要
对国内外海洋仿生食品的生产加工及消费进行了论述,主要对模拟蟹肉、鱼丸、鱼豆腐、腰花肠、包心鱼丸等海洋仿生食品的生产加工进行了详细介绍。
The comprehensive production, processing and consume of marine bionic food at home and abroad were re-viewed in this paper. The imitation crab meat, fish balls, fish tofu, fish sausages, and stuffed fish balls were introduced in detail.
