摘要
文章以某食品公司生产的冻寿司虾为HACCP计划实施对象,应用HACCP原理,对冻寿司虾加工工艺的每个环节进行了危害分析,确定了生产的关键控制点(CCP),并建立了完善的HACCP体系.实践表明,应用该体系能够提高产品质量,确保产品安全,从而提高企业的经济效益.
In order to investigate the advantages of HACCP, the system was applied in the production of Frozen Sushi Shrimp (FSS) provided by one food company. In the light of the principle of HACCP, all hazard factors that possibly affect the product quality in the processing of FSS were analyzed to confirm the critical control points. Practice illustrates that HACCP contributes to improving the quality of FSS and ensuring the product safety, thus enhancing the economic efficiency of enterprises.
