南极磷虾肉营养基料脱脂工艺研究 被引量:6

摘要 以南极磷虾肉糜为原料制备南极磷虾营养基料,研究其乙醇脱脂工艺条件。通过单因素、正交试验探讨乙醇溶液体积分数、料液比、脱脂温度、脱脂时间、脱脂次数对脱脂效果的影响。正交试验直观分析结合实际生产因素确定最佳脱脂工艺:脱脂溶剂为95%乙醇,料液比1:6(m/v),脱脂温度50℃,脱脂时间1h,脱脂次数2次。验证试验脱脂产物粗脂肪质量分数为0.65%,脱脂率为97.76%,粗蛋白质质量分数为81.39%,蛋白质氨基酸组成均衡。 The nutrient material is processed by minced Antarctic krill meat as raw material, the process conditions of degreasing is researched. The effects of volume fraction of ethanol solution, solid-liquid ratio, degreasing temperature, degreasing duration, the number of degreasing times on degreasing efficiency is discussed through the single factor test and orthogonal test. The optimal degreasing process conditions are obtained from visual analysis of orthogonal teat results combined with actual production factors: ethanol solution of 95%(v/v) volume fraction, 1:6(m/v) of solid-liquid ratio, 50 ℃ of degreasing temperature, 1 hour of degreasing duration and 2 times of degreasing. The rate of fat removing is 97.76% in the degreasing process. The mass fraction of crude fat is 0.65% in verification test product and the mass fraction of crude protein is 81.39% while amino acid composition of protein is balanced.
