摘要
筷子是世界上公认的独特餐具,演绎了悠久的中华文明。在看到筷子传承着中华文化与文明的同时,也应看到它在中国传统公宴就餐中的局限性。中国食文化专家赵荣光教授提议实行文明公宴就餐"革命",推行进食筷、取食筷并用的"双筷制",正在被越来越多的就餐者愉快地试验着。它巧妙化解聚合氛围、习惯传统、就餐卫生与文明等之间的矛盾,是与时代文明相应的就餐方式。推行"双筷制",要宣传与体现"双筷制"艺术性,餐饮业界应提高对其社会责任的认识。
Chopsticks, a universally accepted tableware, has deduced long-standing Chinese civilization. We should be aware of chopsticks" inheritance of Chinese culture and civilization as well as their limitations in tradi-tional Chinese business banquets. "Double chopsticks practice" advocated by Professor Zhao Rongguang, a spe-cialist of Chinese catering culture, is on trial by an increasing number of dinners. Ingenious resolution of contra-dictions among the agglomeration, practices, dinning sanitation and civilization is the dinning manner in line with civilization of the times. The catering industry should increase the public awareness of its social responsibility in an effort to promote "double chopsticks practice", popularize and embody the artistic quality of "double chop-sticks practice".
