色拉的微生物状况与食品安全

摘要 为了解本市色拉的食品卫生状况,保障人民食品安全,对本市的色拉进行了为期两年的微生物检测,结果显示菌落总数和大肠菌群为主要的污染菌,检出的少量致病菌则提示了食品安全的隐患。通过对检测结果的综合分析,阐述污染的原因和特点,提出建立食品安全管理体系以加强餐饮业的卫生质量管理,并尽快完善和修订国家标准,使产品标准和检测方法相匹配,建议卫生标准增加蜡样芽孢杆菌的检测项目。 In order to find out our city hygiene status of salad food, and ensure people's food safety, microbial test of our city salad for 2 years was carried out. The results showed that the total number of colonies and coliform bacteria were the main contaminating bac- teria. The detection of a small amount of pathogens warned us the risks of food safety. Through a comprehensive analysis of the test results, pollution causes and characteristics had been elaborated and the establishment of a quality management system to strengthen the management of the food and beverage industry was proposed to expect the development and revision of national standards which enable products standards match test methods. Also suggest establishing health standards and increasing the detection of Bacillus cereus project.
