摘要
综述了米糠发酵及饮料制作的研究概况,分析认为发酵是米糠资源深加工的有效途径。目前,米糠发酵基础研究薄弱,并且发酵对米糠营养结构的影响及发酵提取物的功效等缺乏产品开发系统研究。米糠发酵及饮料研制是米糠资源产业化开发的主要途径,该文旨在为米糠深加工利用提供参考。
Rice bran fermentation and the development of the beverage were summarized. According to the analysis, fermentation is an effective way for the further processing of rice bran resources. At present, rice bran fermentation research works such as fermentation of rice bran influence nutritional structure and the effect of fermentation extract are not enough. Rice bran fermentation drinks are the main way of rice bran resources industrialization development, but lack product development system research. This study aims to provide a reference for rice bran processing utilization.
