磷虾肌肉营养成分的分析和评价 被引量:16

摘要 为评估太平洋磷虾的营养价值,采用常规营养指标测定方法对太平洋磷虾和南极磷虾肌肉的营养成分进行测定,并对其营养价值进行综合评价和比较。结果表明:太平洋磷虾肌肉(干样)中粗蛋白含量为65.80%,18种氨基酸总量为56.5%,其中8种人体必需的氨基酸含量为26.01%;南极磷虾肌肉(干样)中粗蛋白含量为62.80%,18种必需氨基酸总量为57.3%,其中8种人体必需氨基酸含量为25.19%。太平洋磷虾肌肉(干样)中粗脂肪含量为8.97%,脂肪酸组成中多不饱和脂肪酸含量达到47.93%,其中EPA和DHA的含量分别达到9.12%和25.82%;南极磷虾肌肉(干样)中粗脂肪含量为5.80%,多不饱和脂肪酸含量达到41.31%,其中EPA和DHA的含量分别达到26.28%和11.42%。太平洋磷虾矿物质和微量元素含量丰富,与南极磷虾含量相当。综合分析认为,太平洋磷虾与南极磷虾均为营养价值较高的虾类,具有良好的开发利用前景。 Conventional methods were used to determine the nutritive components of the muscle of Euphausia pacifica and Euphausia superba. The nutritional value of these two species was comprehensively evaluated and compared. The results showed that the crude protein, total amino acids and 8 essential amino acids accounted for 65.80%, 56. 5% and 26.01%, respectively, of the muscle of Euphausia pacifica while the crude protein, total amino acids and 8 essential amino acids accounted for 62.80%, 57.3% and 25.19%, respectively, of the muscle of Euphausia superba. The content of crude fat in muscle, polyunsaturated fatty acids, EPA and DHA in total fatty acids of Euphausia pacifica were 8.97%, 47.93%, 9.12% and 25.82%, respectively; while The content of crude fat in muscle, polyunsaturated fatty acids, EPA and DHA in total fatty acids of Euphausia superba were 5.80%, 41.31%, 26.28% and 11.42%, respectively. In terms of mineral content, there were no significant differences between Euphausia pacifica and Euphausia superba. It can be concluded that Euphausia pacifica and Euphausia superba are both rich in nutrition.
