摘要
蜂蜜蛋白主要来自蜜蜂和蜜源植物,是蜂蜜真伪鉴别的重要内标物。不同来源的蜂蜜,其蛋白之间存在一定的差异,这些差异可以作为蜂蜜是否掺假和真伪鉴别的依据。文中从蛋白质差异方面对蜂蜜真伪鉴别的方法作了综述,并对各种方法进行了分析评价。
