摘要 文中简介了传统麦曲的特色和作用,并重点对采用机械装置替代传统踏曲工艺生产麦曲的工艺进行了应用研究。经实际应用证明,黄酒机械制曲工艺设置合理,操作简便,机械流水作业程度高,成型块麦曲质量可与传统麦曲相媲美。具有质量稳定、可靠,曲块外型整齐如一,表面光滑均匀之特点,并可减轻劳动強度,降低制曲生产成本,大大提高劳动生产率,改善制曲环境,社会经济效益明显。 Feature and affect of traditional koji was introduced in this paper,and the mechanical koji making was focused on instead of traditional way.The practical application showed that wine mechanical koji process has the advantages in reasonable and easy operation,high degree of mechanical assembly line,etc.Block koji quality can be comparable with the traditional koji,and has a stable and reliable quality,curved block tidy and consistent,with smooth and uniform surface.It can reduce labor intensity,reducing koji production costs,greatly improve labor productivity,improve koji environmental,has good social and economic benefit.
