摘要
以葛花提取液、木糖醇为主要原料,采用正交试验优化葛花汁饮料的工艺条件和配方。结果表明,葛花汁无糖饮料的最佳配方为:葛花提取液5%、木糖醇10%、柠檬酸0.45%、复合稳定剂0.05%。产品清新杀口,具有葛花汁特有的香味。
Using the extract of kudzuvine flower and xylitol as the main raw material,the orthogonal test was applied to optimize the conditions and formulations of kudzuvine flower juice drink process.The results showed that for the optimal manufacturing process and formulation of the kudzuvine flower juice drinks were as follow: extract of kudzuvine flower 5%,xylitol 10%,citric acid 0.45%,stabilizer 0.05%.The product was fresh and sprightly,with unique flavor of kudzuvine flower juice.
