电子鼻识别大米挥发性物质的应用性研究 被引量:26

摘要 利用电子鼻对不同收获年份、不同产地和不同基因型大米的挥发性气味物质进行检测,并对采集数据进行主成分分析(PCA)和判别因子分析(DFA)。结果表明:所测样品被区分为两大组群,分别是2011年和2009年收获的稻米,2011年收获稻米的两个不同基因型大米的区别指数为92.01%,同一基因型不同产地大米间区别指数小于80%,电子鼻能很好地区分出不同基因型、不同收获年份大米气味物质的差异,但是不能很好区分大米的不同产地,将其应用于鉴别大米新陈和基因型的差异是可行的。 The volatile odor material of rice from different harvest years, different cultivated regions and different genotypes was detected by electronic nose, the collected data were analyzed by using principal component analysis (PCA) and discriminant factor analysis (DFA). The results showed:the test sample was divided into two groups, which were rice harvested in 2011 and 2009 respectively, discrimination index between two kinds of rice which was of different genotype and harvested in 2011 is 92.01%, discrimination index among rice of same genotype and different habitats was less than 80%. Electronic nose can well distinguish the difference between odor substance of rice from different genotype and different harvest year, rice from different harvest year was not discriminated very well, so it was feasible that electronic nose indentified freshness and genotypical difference of rice.
