Antioxidant activities of different varieties of sunflower seed oils

摘要 用超声波法提取S-31、MGS、内葵杂3号、T526、白葵杂9号5个品种葵花籽油,采用Schaal烘箱法加速氧化,比较加速氧化对不同品种葵花籽油过氧化值、酸值、碘值以及氧化后产生的共轭二烯与共轭三烯含量的影响,综合筛选出具有高抗氧化性的油葵品种。结果显示,S-31葵花籽油在氧化过程中过氧化值的变化量以及氧化后产生的共轭二烯与共轭三烯含量显著低于其余各品种(P<0.05),且酸值的变化量显著低于内葵杂3号、T526、白葵杂9号,表明S-31品种抗氧化性较好。 Sunflower seed oils were extracted from the seeds of five sunflower varieties by ultrasound meth- od. Accelerated oxidation of sunflower seed oils were studied by Schaal oven method. The effects of ac- celerated oxidation on peroxide value, acid value,iodine value and contents of conjugated dienes and con- jugated trienes produced by oxidation in sunflower seed oils were compared to screen sunflower variety with high antioxidant activity. The results revealed that the variation of peroxide value during the acceler- ated oxidation and the contents of conjugated dienes and conjugated trienes after oxidation in the oil ex- tracted from S - 31 variety were significantly lower than the other four varieties ( P 〈 0.05 ) and the varia- tion of acid value of S - 31 sunflower seed oil was markedly lower than that of Neikuiza 3, T526 and Baikuiza 9 sunflower seed otis, which indicated that the antioxidant activity of the S - 31 variety was better than that of the other four varieties.
