参考国内外食品安全可追溯性体系的流程,结合我国的具体情况,重点研究咸蛋产品的质量安全追溯体系,为咸蛋出口企业建立食品可追溯体系的流程。该系统包括企业端管理信息系统、产品数据库系统、追溯信息查询系统3个部分。通过以数据集成与数据共享技术、条形码与无线射频识别技术以及网络技术等为手段,从而实现产品质量控制和追溯流程,为企业在应用可追溯体系时遇到的问题,提出解决办法。
