摘要 目的了解大连市食品中食品添加剂使用与残留情况。方法按照《2012年食品中化学污染物和有害因素监测工作手册》规定方法进行检测。结果 10份饮料中安赛蜜超标4份,超标率为40%;5份果冻中安赛蜜超标3份,超标率为60%;60份熟肉制品中,亚硝酸盐检出6份超标,超标率10%;5份海蜇制品中,4份铝残留量超标,超标率为80%;腐竹与银耳各1份二氧化硫超标;此外,2份非发酵豆制品检出苯甲酸,超标率为6.67%,属于超范围使用。结论市售饮料、果冻安赛蜜超标严重,熟肉制品与海蜇制品中亚硝酸盐、铝残留污染明显,需进一步加强监管,控制污染。 Objective To investigate the situation of application and residual quantity of food additives among food in Dalian.Methods All food samples were detected according to the determination method from the Service Manual of Chemical Contaminants and Hazardous Factors Monitoring in Food in 2012.Results The excessive rates of acesulfame in drinks and jellies were 40%(4/10) and 60%(3/5).The excessive rate of nitrite in cooked meat products was 10%(6/60).The excessive rate of aluminium residual in jellyfishes was 80%(4/5).The residual of sulfur dioxide in dried soya cream(1/19) and tremella(1/16) was also found to exceed the standard.Moreover,benzoic-acid was detected in non-fermented soy food(6.67%,2/30) and it was unallowed.Conclusions The pollution of food additives in drinks,jellies,cooked meat products,and jellyfishes sold in the markets of Dalian is seriously,and hence,more work should be done in reinforcing the supervision and controlling the abuse of food additives and residues.
