江西半枫荷蜜理化指标和香味成分分析 被引量:1

摘要 参考国家相关标准的方法检测了江西宜丰地区半枫荷蜜的理化指标成分,通过气相色谱-质谱法对其挥发性及半挥发性香味成分进行了分析。结果表明:半枫荷蜜的各项指标均符合蜂产品现行的国家和行业质量标准;采用固相微萃取方法从香味成分中提取并分离鉴定出51种化合物,包括酸类、醛类、酮类、酯类、醇类、腈类以及少量其他化合物。通过对其香味成分的分析比较发现,半枫荷蜜中的醇类相对含量最高,对其香味形成起重要作用。 The physiochem ical of Semiliquidambar cathayensis H.T.Chang honey made in Jiangxi Yifeng area was analyzed according to the relevant national and occupation standards. Meanwhile, the aroma composition was separated and analyzed by GC-MS. The results indicated that all indexes of Semiliquidambar cathayensis H.T.Chang honey met the current national and industrial quality standard of honey products; Fifty-one compounds are abstracted and isolated and identified from the honey by solid-phase microextraction (SPME), including acids, aldehydes, ketones, esters, alcohols, nitriles and other small amounts of compounds. In addition, alcohols showed the highest relative content in it, which contributed greatly to its aroma.
