聚合度对儿茶素类吸收、代谢及抗氧化能力影响的研究进展 被引量:3

摘要 儿茶素类物质是一类良好的抗氧化剂,但由于结构复杂,其构效关系一直是研究的难点。聚合度是其结构复杂性的一个重要因素,对不同聚合度儿茶素的结构、吸收代谢及不同聚合度对其抗氧化能力影响的研究情况进行综述,并对儿茶素结构与抗氧化功能间的关系进行了展望,旨在为儿茶素类物质的构效关系研究提供参考。 Abstract: Catechins are efficient antioxidants, but the structure-activity relationship of these compounds is difficult to illustrate because of their complicated structures. Polymerization degree is one important characteristic of catechins. Absorption, metabolism and antioxidant activity of catechins with different polymerization degree are introduced in this paper, aiming to provide a reference for the research about the biological function of catechins.
