摘要
共晶点、共熔点是物料真空冷冻干燥工艺中两个重要的参数。应用差示扫描量热法测定茶树菇的共晶点和共熔点分别为为-13.66℃(菌柄)、-8.5℃(菌伞)和共熔点为7.12℃(菌柄)、4.67℃(菌伞),同时测定了茶树菇的部分玻璃化转变温度为-24.11℃。可为茶树菇真空冷冻干燥工艺的制定提供参考。
The eutectic and co-melting points of the material were two important parameters in vacuum freezedrying process,Eutectic and co-melting point of agrocybe aegerita were determined by DSC(differential scanning calorimetry).The result showed that eutectic of stipitipellis and pileus was-13.66 ℃ and-8.5 ℃ respectivly,and theco-melting point of stipitipellis and pileus was 7.12 ℃and 4.67 ℃,simultaneously,the part glass-transition temperature determinned by DSC was-24.11 ℃.This study was due to providing scientific guidance for vacuum freeze-drying of agrocybe aegerita.
