摘要
对菌草和传统木屑两种培养料栽培的猴头菌子实体不同生长发育时期营养成分的含量进行了研究.结果表明,菌草和木屑栽培的猴头菌在菌蕾期、成熟期和衰老期的生长发育过程中,子实体的各种营养成分含量都在不断变化.其中,成熟期用菌草栽培的子实体蛋白含量是木屑栽培的1.14倍,总糖含量与木屑栽培的相当,氨基酸总量和各种氨基酸含量均略高于木屑栽培的子实体,除总汞外,铅、镉、总砷等重金属含量均略低于木屑栽培的子实体.可见,用菌草栽培的猴头菌子实体的营养成分含量高于木屑栽培的子实体.
The chemical compositions in fruit bodies of Hericium erinaceus ( Bull. ) Pens cultivated respectively with Juncao and saw- dust were investigated at some growing stages. The nutrients content of H. erinaceus cultivated either with Juncao or sawdust continu- ously changed from budding stage to mature stage and aging stage. Compared with the cultivation with sawdust, their total sugar con- tents were almost the same, while crude protein content in H. erinaceus cultivated with Juncao was 14% higher; total content of ami- no acid and the content of each amino acid were also higher, and contents of heavy metals were lower except the content of total mer- cury. Altogether, the nutrient composition of H. ednaceus cultivated with Juncao was not inferior to that cultivated with sawdust.
