摘要
目的了解天津开发区餐饮业餐具消毒质量,为进一步采取有效管理措施提供依据。方法 2008-2011年采用大肠菌群快速检验纸片法对区内不同类别餐饮业的消毒后餐具进行了消毒效果监测评价。结果 4年间检测各类餐饮具2 372件,总合格率为81.28%,其中2011年最高(84.67%),2009年最低(78.91%)。酒店、餐馆、各类院校及企业食堂4类不同的餐饮单位中,酒店和企业食堂餐具消毒合格率较高,分别为90.84%和88.37%;餐馆和各类院校餐具消毒的合格率较低,分别为73.55%和72.41%。结论应加强各类院校和中小餐馆的餐具消毒监督管理措施,尤其应加大对餐具消毒效果的检测力度。
Objective To understand the sterilization quality, so as to provide a basis for making effective man- agement measure. Methods The sterilization effects of tableware from various restaurants were monitored and evaluated by using coli bacillus fast scraps of paper method from 2008 to 2011. Results A total of 2 372 table- ware were detected during the four years, and the total qualified rate was 81.28%, in which, 84. 67% (2011) was the highest and 78.91% (2009) was the lowest. Among hotels, restaurants, schools and can- teens of enterprise, the hotel and the canteen of enterprise had the highest sterilization qualified rates, which were 90. 84% and 88.37%, respectively. By contrast, the restaurant and school were at low sterilization qualified rates, which were 73.55% and 72.41% , respectively. Conclusions The health supervision and management departments should strengthen the regulation and monitoring of the sterilization of schools and me- dium/small restaurants" tableware, especially, reinforce detecting efforts to the sterilization effects of table- ware.
