摘要
从质构仪测定结果与感官评定结果之间的相关性研究、质构仪应用于食品的质构分析、质构仪测试方法的建立及质构测试参数的优化、质构仪应用于果蔬贮藏、产品研发等过程中的工艺优化、质构仪应用于食品物性特征与生理生化机理方面的研究共5个方面阐述了近年来质构仪在食品研究中的应用现状,最后分析了质构仪在食品研究中的应用前景。
The article elaborated the application situation of texture analyzer from five aspects: association studies between the texture analyzer testing results and sensory evaluation results; texture analyzer applied in food texture analysis ; the establishment of testing method and the optimization of the parameters for test; texture analyzer applied in the optimizing process of fruit and vegetable storage, product research and development, etc ; texture analyzer applied in the studies of food property characteristics and physiological and biochemical mechanism. In the last, the application prospects of texture analyzer in the study of food were analyzed.
