摘要
食品颜色是其品质重要的外在特征。文章从目视法、测色仪法和计算机视觉法三类食品颜色检测技术的应用及存在问题等方面进行综述。从颜色信息采集方式和人的颜色视觉感知两个方面阐述食品品质颜色检测可行性理论基础,重点介绍测色仪法和计算机视觉法在食品工业各领域的应用,分析目视法、测色仪法和计算机视觉法的特点及其局限性,并对具有发展潜力的计算机视觉法进行展望。
The color of food is an important outside characteristic of food's quality.The applications and existing problems of food's color detection technology,such as human visual method,color measuring instrument method and computer vision method,are reviewed in this paper.Firstly,the feasibility of color detection for food quality is described based on theory which is comprised of both color information acquiring method and visual perception of color.Secondly,the applications of both detection methods of color measuring instrument and computer vision in various fields of food industry are emphatically presented.Finally,the characteristics and limitations of these methods are analyzed and the potential development trends of computer vision method are prospected.
