乳化剂对棕榈油中熔点分提产物结晶行为的影响

摘要 在分析棕榈油中熔点分提产物(PMF)脂肪酸和甘油三酯组成的基础上,考察了乳化剂分子蒸馏单甘酯(HP-C)和单不饱和脂肪酸甘油酯(TYPESF)对PMF结晶行为的影响。结果表明:PMF的主要脂肪酸组成为棕榈酸和油酸,二者总量超过总脂肪酸含量的85%;主要甘油三酯组成为POP/PPO,含量超过总甘油三酯含量的50%。添加HP-C的样品在低温时(5℃和10℃)的固体脂肪含量(SFC)高于空白样品,而随着温度的升高(20℃及以上)则低于空白样品。采用Avrami方程分析了5℃和10℃时添加乳化剂前后PMF样品的等温结晶曲线,得出的动力学参数表明,乳化剂的添加并未改变PMF的成核和晶体生长机制,但HP-C加快了PMF在不同温度下的结晶速率。
