乳清蛋白作为优质的蛋白质来源,以其良好的功能特性受到了人们的广泛关注,其生产形式多样、应用范围广泛。本文主要综述了乳清蛋白的几种加工方法及其应用现状。
More attention was paid for the major properties of whey protein as a source of protein which was high quality and vaired forms of exploitation with a wide rang of application. This article reviewed several processing methods and the application of whey protein.
