土壤质地对蛇龙珠葡萄酿酒品质的影响 被引量:8

摘要 以蛇龙珠葡萄为试材,分别选定了烟台地区砂土、壤土、粘壤土和粘土4种典型土壤质地进行研究,分析比较了4种土壤质地所产蛇龙珠葡萄的酿酒品质的差异。结果表明,土壤质地对蛇龙珠葡萄果实和葡萄酒品质影响较大,含砂石的壤土条件下葡萄酿酒品质较佳。砂土、壤土与粘壤土、粘土相比,生产出的蛇龙珠葡萄果实小,果穗疏松,酿出的葡萄酒酚类物质含量高,颜色深,感官品质较好。 With Cabernet Gernischt from Yantai region as the materials, the effects of four different soil textures, including sand, loam, clay loam and clay, on the wine quality were investigated. The physical-chemical parameters, color, phenols content, and sensory quality were evaluated and systematically compared. The results showed that the soil texture had significant effect on the berry and wine quality, and the grape in sandy loam had the better wine-making quality. Compared with clay loam and clay soils, the grape in vineyard of sand and loam soils had smaller berry size, looser cluster and its corresponding wine presented better color and sensory quality.
