大白菜窖贮保鲜技术 被引量:1

摘要 大白菜是十字花科芸薹属叶用蔬菜,为我国原产和特产蔬菜。由于我国南北方都有大白菜栽培,特别是北方栽培量很大,是秋季生产、冬季上市最主要的蔬菜种类,更因为其营养丰富,味道清鲜适口,做法多种,有一定的药用功效,又耐贮藏,是人们常年食用的蔬菜,因此素有"菜中之王"的美誉。大白菜鲜嫩、含水量大,生理呼吸作用强,在北方严寒而漫长的冬季贮藏保鲜是个难题。如贮藏不当,菜体极易严重失水干枯,或者脱帮、腐烂,损耗大,风险高。黑龙江省农垦科学院农畜产品综合利用研究所以半地下式水泥菜窖进行了大白菜窖贮保鲜研究,利用土壤保温,结合机械制冷与通风,优化温度、湿度、通风三要素,给大白菜储藏越冬创造了良好条件,取得了良好的保鲜效果。
