摘要 现今酿酒行业的机械化生产取得了一系列成果,在润粮、蒸粮、蒸酒、粮糟输送、摊晾、加曲等环节上都已能进行机械化生产,但白酒生产最关键的固态发酵环节却仍沿用传统工艺。立式发酵设备的研制可解决机械化进程中的关键问题,本研究根据生产所需设计及研制了一款清香型白酒立式发酵设备,使白酒生产完全实现机械化成为可能。 At present, a series of breakthroughs has been achieved in mechanized production in liquor-making industry including the procedures of grains soaking, grains steaming, distilling, grains transportation, drying and Cooling, and starter addition etc. However, solid fermentation, as the key procedure in liquor-making, still remains in traditional ways. In this study, a newly-developed vertical fermenting instrument for Fen-flavor liquor was introduced, which could make complete mechanized production of Fen-flavor liquor possible in practice.
