摘要
结合多年的实践经验,总结了清香型铁观音加工工艺流程,包括鲜叶采摘、萎凋(晒青或室内萎凋)、做青(摇青、晾青)、杀青、包揉、初烘、复包揉、固形及烘干等工艺。
Combined with practical experience for years, the processing flows of soft scent type of Tieguanyin tea were sum- marized, including picking fresh leaves, withering （sun withering or indoor-withering） , green-making （rocking green and airing green） , deactivation of enzymes, boll rolling, pre-drying, repeat boll rolling, shape-fixing, drying and so on.
