摘要
茶叶指纹图谱是一种综合、可量化的化学鉴定手段,用于茶叶真伪的鉴别、茶叶原料、半成品及成品茶的质量评价等。从茶叶品种及产地识别、茶叶香气成分和理化品质鉴定、茶叶功能性成分研究等方面对茶叶指纹图谱的研究进展进行综述,为茶叶指纹图谱的进一步发展和完善提供理论和实践参考。
Tea fingerprint is a kind of comprehensive, quantifiable chemical identification method, and is used to identify tea's authenticity and assess the quality of tea raw materials, semi-finished products and finished products, etc. This paper covered from the identification of teas' varieties and origins, identification of teas' aroma components and aroma quality, and research of teas' main functional components in order to summarize the research progress of tea fingerprint. This paper aimed to provide references for the further development and improvement of tea fingerprint.
